Sausage, Egg, and Cheese Breakfast Sandwiches

Ingredients:

  • ½ pound turkey breakfast sausage
  • 2 teaspoons coconut oil (or canola if coconut isn’t handy)
  • Sliced cheddar cheese (I buy delicious white cheddar at Costco, and then make thick slices myself)
  • 6 eggs
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • (feel free to add any other spices that you like in your eggs – we often also add onion flakes, but that’s just me.  You do you.)
  • 6 multigrain English muffins, split and toasted

Instructions:

  1. Heat a large skillet over medium/high heat.
  2. Divide sausage into 6 equal patties.  
  3. Add 1 tsp oil to pan, and cook patties approximately 2 minutes each side, or until done. Remove from pan.
  4. Add eggs to pan and 1 tsp oil, and cook, approx. 4 minutes.
  5. Divide eggs evenly over bottom halves of muffins.  Top each with 1 sausage patty, 1-2 slices of cheese, and top half of the muffin.
