Honey Nut Bars

(great for a grab-and-run option)

Ingredients:

  • ½ cup raw almonds
  • ¼ cup raw pecans
  • ¼ cup raw walnuts
  • ½ cup sunflower seeds
  • 1/3 cup dried blueberries
  • ¼ cup agave nectar
  • ¼ teaspoon cinnamon
  • a pinch of cardamom
  • a few pinches of fine grain sea salt

Instructions:

  1. Preheat oven to 325
  2. Line an 8x 8 inch pan with tin foil (parchment also works), and lightly coat foil with coconut oil
  3. Combine nuts in a food processor until coarsely chopped (avoid chopping too fine)
  4. In a large bowl, mix nuts and nectar until nuts are fully coated.  Then add blueberries, spices, and salt and mix.
  5. Pour mixture onto the pan, pressing down with the spatula’s flat side to flatten it
  6. Bake for 15-18 minutes, rotating halfway through
  7. Let cool and enjoy!
