Peanut Butter and Banana Overnight Oats

(everything’s better with peanut butter, Am I Right?)

Ingredients:

  • 1 large ripe banana, mashed with a fork (about ½ cup)
  • ¼ cup creamy peanut butter
  • 1 cup rolled oats (NOT quick-cooking)
  • 1 cup unsweetened almond milk
  • ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • 1 tsp honey (adjust to taste)
  • Optional Toppings: sliced bananas, cinnamon, dark chocolate chips

Instructions

  1. In a medium bowl, combine mashed banana and all other ingredients (yes, mixing in peanut butter can be a little messy)
  2. At this point, you can either cover the bowl and put it in the fridge, or pour directly into individual serving containers, if you have them handy.  
  3. Refrigerate for at least 3 hours, or overnight
  4. To eat: stir well, add your toppings, and you’re set!
